What a fun and different recipe. My sister forwarded this family winter favorite. These croutons are unbelievable. They soak up the flavor and taste so good.
Ingredients:
1 roasting chicken
1 large yellow onion, sliced
Olive oil
Kosher salt
Freshly ground black pepper
2 lemons, quartered
2 Tbs. butter, melted
6 C. bread cubes (1 baguette cut into 3/4-inch cubes)
Directions:
• Preheat oven to 425 degrees
• Toss onion and a little olive oil in a roasting pan
• Rinse chicken and pat dry
• Place chicken on top of onions in roasting pan and sprinkle inside with salt and pepper and place lemons • inside the cavity of the chicken.
• Brush chicken with melted butter and sprinkle with salt and pepper. Tuck wings under body and tie legs together.
• Roast for 1 1/2 hours (or until juices run clear when cut between leg & thigh). Cover with foil and let sit for 15 minutes while you prepare croutons.
• In large sauté pan, heat olive oil until very hot. Lower heat to medium-low and sauté bread cubes, tossing lightly (10 minutes). Add olive oil as needed and sprinkle with salt and pepper.
• Place croutons on plate and arrange chicken on top. Pour pan juices over chicken.
