Longtime Whitefish barista serving specialty coffee out of his mobile coffee bar

Working as a barista for more than 10 years, making the perfect cup of coffee is often on Matthew Bussard’s mind. And lately his focus has shifted to finding a way to make that perfect cup of coffee on the go.

Bussard began looking at logistics for building a custom, mobile coffee bar last year. The plans became a reality this summer, and for the past few weeks Bussard has been serving specialty coffee at events around the valley, calling his mobile service Azul Coffee Bar.

“The idea is to fill the need, or maybe even create the need, for mobile, specialty coffee,” Bussard said.

Bringing the focus back to the flavor of the coffee itself, Bussard’s menu is simple, featuring only four items.

“In a weird way over the last 20 to 30 years in specialty coffee and in these cafes we’ve created this monster of too many choices,” Bussard said.
