MONTANA MARKET: Angel Hair Pasta with Shrimp

After a big Thanksgiving dinner and before all the Christmas sweets attack your waistline, serve this delicious shrimp recipe to your family. They’ll be glad you did!

Ingredients:
12 oz. of angel hair pasta
3 Tbs. olive oil
3 cloves of garlic, minced
2, 14.5 oz. diced tomatoes, drained
1 lemon, juiced
1 Tbs. fresh oregano, chopped
Salt and pepper to taste
1 lb. shrimp, peeled and deveined
Parmesan cheese, shredded

Directions:
Cook pasta according to directions; drain and set aside.
In a large non-stick skillet heat oil; add garlic and sauté until golden, about a minute.
Add tomatoes, oregano, lemon juice, salt and pepper.
Lower heat and simmer for 10 minutes.
Add shrimp and cook until just pink.
Add pasta and toss until heated thoroughly.
Serve immediately.
Top with a sprinkle of Parmesan cheese if desired.
