MONTANA MARKET: Blue Cheese Pear Salad

Great as a side salad or as a meal. Fresh ingredients tie everything together.

1 head of red leaf lettuce, torn into pieces
2 fresh pears, cored and sliced
5 oz. fresh blue cheese, crumbled
2 avocados, peeled, pitted and sliced
4 green onions
1/4 C. white sugar
1/2 C. pecans
1/3 cup olive oil
3 Tbs. red wine vinegar
1 1/2 tsp. white sugar
1 1/2 tsp. mustard
1 clove garlic, chopped
1/2 tsp. salt
black pepper to taste

• In a non-stick skillet over medium heat, combine 1/4 cup of sugar and pecans. Stir gently until sugar melts and pecans are caramelized. Transfer to parchment paper to cool. After cooled, chop into pieces.
• To make dressing, in a small food processor, blend oil, vinegar, 1 1/2 tsp. sugar, mustard, garlic, salt and pepper.
• Assemble lettuce evenly among four plates. Top with 1/2 pear and 1/2 avocado on each. Sprinkle blue cheese evenly on four plates. Add green onion to each plate. Drizzle dressing evenly on four plates over salad and sprinkle with chopped pecans.
• Serve and enjoy!
