MONTANA MARKET: Bolognese Meat Sauce

A hearty meat sauce on pasta is a great way to end a day on the slopes. Serve with a salad and crusty French bread and they’ll be coming back for seconds.

Ingredients:
2 pounds of lean ground beef
1 white onion, chopped
7 carrots, chopped
4 slices of ham
1/2 C. butter
14 oz. of beef broth (I prefer Better Than Bullion)
6 oz. tomato paste
1 lemon, zested
2 bay leaves
1/2 tsp. dried basil
1 1/2 tsp. ground nutmeg
4 oz. heavy cream
Fresh parmesan, optional

Directions:
• Brown meat in skillet over medium-high heat. Drain (I rinse with hot water) and set aside.
• In food processor, chop carrots, onions and ham.
• Melt butter in a large cast iron pot over low heat. Stir in carrot mixture and simmer for 5 minutes. Add browned beef, broth, tomato paste, lemon zest, bay leaves, basil and nutmeg.
• Simmer over lowest heat, partially covered, for at least two hours, stirring occasionally.
• Just before serving, stir in cream and mix well.
• Serve over hot linguine noodles.
• Garnish with parmesan cheese if preferred.
